Healthy Pancake Recipe
When my sisters and I were younger, our Dad was on a low carb diet. This meant we ate the same way he did: no bread, grains, pasta, and sadly no pancakes. My mom started looking for recipes that were low carb and delicious. She found a recipe for pancakes that were much healthier than regular pancakes. My whole family tried the new recipe and loved it! We started calling them healthy pancakes. This is a very simple and quick recipe if you are a beginner in the kitchen, or you just want an easy, healthy, and delicious breakfast.
Healthy Pancakes
Note: for this recipe you need a blender of some sort.
Ingredients:
1 cup dry oats
1 cup egg whites
1 cup cottage cheese
¼ tsp baking powder
1 tsp cinnamon
2 tsp vanilla extract
1 banana
Instructions:
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour all ingredients into a blender and blend until the mixture is smooth.
- Pour the batter onto the griddle, using about ¼ cup of batter for each pancake. Cook until both sides are golden brown. Serve hot.
