As we reach the height of autumn, we also reach the height of any and all recipes related to apple or pumpkin. An especially delicious and easy dessert, perfect for the season, is apple cinnamon blondies. This baked good can be made by experienced or inexperienced bakers and loved by all. Here is my favorite go-to fall recipe!
Apple Cinnamon Blondies:
- Put 2 medium-sized apples, peeled and diced, in a bowl.
- Add ⅛ cup of granulated sugar, 1 teaspoon cinnamon, and mix until combined.
- In a separate bowl, add ¾ cup of softened, salted butter, ⅞ cup light brown sugar, and ½ cup of granulated sugar.
- Whisk with an electric mixer until light and fluffy.
- Add 1 large egg, 1 egg yolk, and 2 teaspoons of vanilla extract.
- Whisk with an electric mixer until light in color.
- Add 1 ⅞ cup of plain flour and fold until just combined.
- Add and fold in the apple mix.
- Scoop into an 8×8” tin lined with parchment paper and smooth it out.
- In a separate bowl, add 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon.
- Mix until combined and sprinkle it over the batter.
- Bake in the oven at 350℉ for 30-40 minutes until done.
- Refrigerate for 2 hours and enjoy!
