The best thing to eat in fall is pumpkin bread, muffins, cookies, pies. Muffins are one of the sweetest things to make when it is fall, especially Pumpkin Muffins! These are filled with milk chocolate chips and are fluffy with the taste of fall in them! With easy mix-together ingredients, they are perfect for an afternoon snack in the crisp fall days. What you will need:
- 1 ½ cups of all-purpose flour
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- 1 cup (8 oz) pumpkin puree
- ⅓ cup of canola oil
- 2 large eggs
- 1 teaspoon of cinnamon
- 1 ¼ cups of white sugar
- ½ teaspoon of salt
- ¾ cups of milk chocolate chips
How to make:
- Preheat the oven to 350 F.
- In a bowl, mix together flour, baking soda and baking powder.
- Set aside your dry ingredients and take out an electric mixer and mix the pumpkin puree, oil, eggs, cinnamon, sugar and salt together until well combined.
- Mix dry ingredients into the wet ingredients, then fold in chocolate chips.
- Put muffin liners in or spray muffin tin with non-stick spray.
- Put batter into muffin tin.
- Cook 30-35 minutes until the toothpick comes out clean.
- Let cool before eating.
- Enjoy!
