Maple Spice Cookies
The Coronavirus has brought about many negative impacts, but it has also allowed many to pursue their interests. I have always enjoyed baking, and thanks to quarantine last spring, I had time to augment my knowledge and develop my skills. Eventually, baking led to a love of food styling, recipe development, and the creation of an Instagram account devoted to my and Brynn Langan’s baking (@bigc_and_lilb_bakes). The following recipe, Maple Spice Cookies, is one of my creations. These sweet and simple cookies are a perfect fall and winter treat with just the right blend of spices. Enjoy!
Note: This recipe can be made with a Stand or Hand mixer.
Ingredients
- 1 cup softened butter
- 1 cup brown sugar
- ½ tsp vanilla extract
- ½ cup maple syrup
- 1 egg
- 2 ¾ cup flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- A pinch of black pepper (optional)
- ¼ tsp of the following: nutmeg, cloves, allspice, ginger
Ingredients for Icing:
⅔ cup icing/powdered sugar
2 tbsp maple syrup
1 pinch salt
1-2 tbsp milk
⅛ tsp cinnamon
Instructions
- Preheat the oven to 375 degrees. Line a cookie sheet with parchment. Whisk flour, baking powder, baking soda, salt, and spices together in a bowl and set aside.
- Cream butter for 1- 3 minutes or until white and fluffy. Add sugar, maple syrup, and vanilla extract. Add egg and mix until incorporated,
- Add flour mixture in intervals until dough is formed. Make sure not to overmix the dough. Chill dough for 10 min.
- Use a small cookie scoop or a spoon to make 2- 3 tablespoon-sized balls. Bake the cookies for 8-10 minutes
- To make the glaze: whisk powdered sugar, maple syrup, milk, salt, and cinnamon together
- Use a spoon to drizzle the icing onto completely cooled cookies
