INGREDIENTS:
2 cups of peanut butter
1/2 cup of softened butter – unsalted, but if salted then omit the salt
2 teaspoons of vanilla extract
1/2 teaspoon of salt
4-5 cups of powdered sugar
1 1/2 cups of chocolate chips
1 teaspoon coconut oil
Festive sprinkles (optional)
RECIPE:
- Line an 8- or 9-inch baking pan with parchment paper
- In a medium bowl, add the peanut butter and butter and blend together until smooth. Then add the vanilla and salt and blend as well.
- Now slowly add the powdered sugar 1/2 cup at a time, scraping the sides of the bowl with a spatula as you go.
- Pour the mixture into the prepared pan and press in an even layer.
- In a microwave safe bowl, add the chocolate chips and coconut oil. Microwave for 30 seconds and stir. Repeat this process again two more times, stirring thoroughly.
- Pour melted chocolate over peanut butter in a pan and spread evenly.
- Refrigerate for 30 minutes, and store in the refrigerator until serving.
